  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup almond butter (or any nut butter of your choice)

  • 1/4 cup milk (dairy or plant-based)
  • 1 teaspoon vanilla extract
  • Optional mix-ins: chocolate chips, chopped nuts, dried fruit, etc.

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the oat flour, whey protein powder, baking powder, and salt in a mixing bowl.
  3. Heat the almond butter and honey (or maple syrup) in a microwave-safe bowl for about 20-30 seconds until softened and easily mixable.
  4. Add the almond butter, milk, and vanilla extract to the dry ingredients. Stir until well combined. If the dough seems too dry, add some milk or non-fat cream.
  5. If you want them to look and taste too good, you may add chocolate chips, nuts, or dried fruit.
  6. Take about a tablespoon of dough and roll it into a ball. Try cookie molds easily available at a nearby grocery store. If you are rolling the dough into flattened balls, place them neatly on the prepared baking sheet and flatten them slightly with the palm of your hand. Repeat with the remaining dough, spacing the cookies a few inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Remove from the oven and let the cookies cool on the baking sheet for a few minutes.
